Shrimp N’ Corn Hushpuppies
Ingredients

  • 1-½ cups white, self-rising cornmeal ¾-cup flour 2 tsp. baking powder ¾ cup finely diced onion 1 tsp. garlic paste 1 tsp. cayenne pepper 3 to 4 green scallions, diced 1-½ Tbsp. sugar Salt & pepper 1 large egg, lightly beaten ¾ cups buttermilk ¾ lb. shrimp, cooked-peeled-diced 9.5oz cream style corn
Steps
  1. Pour 3 to 4 inches of oil into a deep cast-iron pot or Dutch oven and heat to 375 degrees. Combine corn meal, flour, baking powder, onion, garlic paste, cayenne pepper, scallions, sugar, salt and pepper and toss all together. Add remaining ingredients and stir until moistened, allow mixture to rest for 10 minuets. Drop spoonful’s into hot oil and fry in batches until golden brown(about 2 to 3 minutes per side) Drain on paper towels. Keep warm in a 2-degree oven until ready to serve.
