Ingredients
  • 8 c diced tomatoes (no need to blanch to remove skin)
  • 2 c diced onion
  • 2 c diced bell peppers
  • 2 c diced jalapeños (I did not remove the seeds but you do you)
  • 6 to 10 cloves of garlic, minced (I like garlic so I just eyeballed it)
  • 1 c apple cider vinegar
  • 2 T tomato paste
  • Salt and pepper to taste
  •  
  • (To be added after cooking)
  • ¼ c lime juice (the juice of about 2 lime)
  • Cilantro (I used 2 bunches) chopped
