  • 600 grams of Bread Flour (see notes)
  • 50 grams of Cocoa Powder mixed with 130 grams of Strong Coffee
  • 350 milliliters of Filtered Water (100°F)
  • 50 grams of Light Brown Sugar
  • 10 grams of Salt
  • subheading: Vanilla Chocolate Chip Dough (the next day):
  • All of the Levain
  • 600 grams of Bread Flour (see notes)
  • 375 milliliters of Filtered Water (100°F)
  • 45 grams of Light Brown Sugar
  • 20 grams of Vanilla Bean Paste
  • 10 grams of Salt
  • 125 grams of Mini Chocolate Chips
