Baked Chicken Nuggets with Honey Mustard
Ingredients

  • 1 cup finely grated parmesan cheese
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • ¼ cup (half of 1 stick) unsalted butter, melted
  • about 1 ½ pounds boneless skinless chicken thighs, cut into 1 ½ to 2-inch pieces (boneless skinless chicken breasts may be substituted)
  • ½ cup honey, or to taste
  • ¼ cup yellow mustard
  • ¼ cup dijon mustard (grainy or spicy brown mustard may be substituted)
