Ingredients
  • 400g firm tofu - preferably organic
  • 3 tbsp lemon juice (half a lemon)
  • 2 tsp good quality salt
  • ½ cup aquafaba (chickpea water)*
  • ⅓ cup nutritional yeast
  • ¼ cup + 1 tsbp neutral oil (I used rice bran)
  • ½ tsp baking powder
  • 250ml water (warm-room temperature is best)
  • 375g pack of fillo dough
