Braised Lamb Loin Chops
Ingredients
  • 8 to 9 bone-in lamb loin chops, about 1-inch thick
  • Salt and pepper to taste
  • 2 tablespoons cooking oil
  • 2 large stalks celery, chopped (about ½ cup)
  • 1 tablespoon garlic, minced
  • 2 teaspoons rosemary, minced
  • 2 teaspoons thyme, minced
  • 1 large onion, diced
  • 2 bay leaves
  • 1 large carrot (peeled and diced)
  • 2 tablespoons tomato paste
  • 1 cup dry red wine (or sub with extra beef broth)
  • 1 tablespoon Worcestershire sauce
  • 1 to 2 teaspoons beef bouillon powder (optional)
  • 2 to 3 cups beef broth (or water)
  • Salt and pepper to taste
