Graham Crackers (lupin flour)
Ingredients
  • ½ cup butter, softened
  • ½ cup Swerve Sweetener (brown for flavor, but either is ok)
  • 2 tbsp Pyure
  • 1 egg
  • ¾ cup almond flour
  • ¾ cup lupin flour
  • ½ tsp vanilla extract or 15 drops of graham cracker flavoring
  • ½ tsp salt
  • ½ tsp cinnamon
  • subheading: Optional:
  • Sprinkle with cinnamon "sugar" before baking.
Steps
  1. Preheat the oven to 350°F (might try 300 next time)
  2. In a large bowl, beat the butter and sweetener together until lightened and fluffy, about 2 minutes.
  3. Add egg and continue beating
  4. Beat in the dry ingredients little by little until well combined.
  5. Chill for 20 minutes or so.
  6. Set dough ball on parchment paper, roll out to a square, about ¼ inch thick. (Thinner is good)
  7. Cut/score with a pizza cutter to desired cracker size and dock (poke holes) with a fork.
  8. Set paper and crackers on cookie sheet
  9. (You can also roll the dough into 1-inch balls and place a few inches apart on the prepared baking sheets.
  10. Flatten with the palm of your hand or the bottom of a glass)
  11. Bake for 12 to 14 minutes, until the edges are golden brown. (might need to adjust with temp change)
  12. Remove and let cool on pan for at least 5 minutes to firm up completely.
Notes
  • Other sweeteners are ok, but for a crisp cracker erythritol works best. (might try Pyure next time)
