Graham Crackers (lupin flour)

Ingredients
- ½ cup butter, softened
- ½ cup Swerve Sweetener (brown for flavor, but either is ok)
- 2 tbsp Pyure
- 1 egg
- ¾ cup almond flour
- ¾ cup lupin flour
- ½ tsp vanilla extract or 15 drops of graham cracker flavoring
- ½ tsp salt
- ½ tsp cinnamon
- subheading: Optional:
- Sprinkle with cinnamon "sugar" before baking.
Steps
- Preheat the oven to 350°F (might try 300 next time)
- In a large bowl, beat the butter and sweetener together until lightened and fluffy, about 2 minutes.
- Add egg and continue beating
- Beat in the dry ingredients little by little until well combined.
- Chill for 20 minutes or so.
- Set dough ball on parchment paper, roll out to a square, about ¼ inch thick. (Thinner is good)
- Cut/score with a pizza cutter to desired cracker size and dock (poke holes) with a fork.
- Set paper and crackers on cookie sheet
- (You can also roll the dough into 1-inch balls and place a few inches apart on the prepared baking sheets.
- Flatten with the palm of your hand or the bottom of a glass)
- Bake for 12 to 14 minutes, until the edges are golden brown. (might need to adjust with temp change)
- Remove and let cool on pan for at least 5 minutes to firm up completely.
Notes
- Other sweeteners are ok, but for a crisp cracker erythritol works best. (might try Pyure next time)
