IP Mashed Cauliflower
(and a few carrots)
Ingredients
  • Pressure cooker mashed cauliflower (and a few carrots!!)
  •  
  • One or two heads of cauliflower
  • Carrots or broccoli if you want them in there, and don't mind orange or green mashed cauliflower
  • Garlic salt
  • ¼ to ½ cup water, chicken broth, or bone broth
  • 2 to 4 tablespoons of coconut oil or butter
Steps
  1. Add ½ to 1 inch of water in the pressure cooker. Roughly chop veggies and add to the pot. Set timer for 6 minutes on high, and do a natural pressure release (can also do cold water if you're in a hurry). Drain the water and return veggies to the cooking pot. Add butter and water/broth (start with a little bit of liquid - can always add more if needed). Season with garlic salt as desired. Mash with a fork if you prefer more texture, or blend with a stick blender for creamier results.
