White Wine Macaroni and Cheese
Ingredients
  • 1 pound dried pasta (elbow, shells, etc)
  • ¼ cup butter + 2 T, divided
  • 2 TBSP shallot, finely chopped
  • 3 garlic cloves, minced
  • ¼ cup all-purpose flour
  • ¾ to 1 cup dry white wine
  • ¾ cup heavy cream
  • ¾ cup whole milk
  • 2 teaspoons fresh thyme, chopped
  • ¼ teaspoon ground mustard
  • ⅛ teaspoon white pepper
  • salt, to taste
  • 6 to 8 oz. taleggio cheese, rind removed and chopped
  • 8 oz. Monterey jack cheese, shredded
  • ⅓ cup freshly shredded parmesan (optional)
  • 1 cup panko breadcrumbs
