Hawaiian Style Pork

Ingredients
  • 2 pounds boneless pork stew meat
  • 1 (20-ounce) Pineapple chunks in juice
  • 1 red bell pepper; seeded and chopped
  • 3 garlic cloves; minced  1 tbsp. grated ginger
  • 3 tbsp. honey
  • 2 tbsp. brown sugar
  • 2 tbsp. soy sauce
  • 2 tbsp. water
  • 1 tbsp. cornstarch
  • 2 tbsp. olive oil; divided
  • 1 onion; chopped
  • 1 tsp. dried oregano
  • Salt and freshly ground black pepper; to taste

Steps
  1. Drain the pineapple chunks, reserving the juice in а bowl.
  2. For the sauce: in the bowl of pineapple juice, add garlic, ginger, honey, brown sugar, soy sauce, water and cornstarch and beat until well combined.
  3. Place 1 tbsp. of oil in the Instant Pot and select *Sauté*. Then add the bell pepper and onion and cook for about 3 minutes.
  4. Transfer the onion mixture into а bowl.  Place the remaining oil in the Instant Pot and select *Sauté*.
  5. Then add the pork meat and cook for about 4 to 5 minutes.
  6. Add pineapple chunks, oregano, salt and black pepper and stir to combine.  Select the *Cancel* and stir in the sauce.
  7. Secure the lid and place the pressure valve to *Seal Position*.  Select *Manual* and cook under *High Pressure* for about 10 minutes.
  8. Select the *Cancel* and carefully do а *Natural Release* for about 5 minutes and then do а *Quick Release*.
  9. Remove the lid and stir in the cooked onion mixture. Serve hot.
