Ingredients
  • 2 tsp extra virgin olive oil, divided
  • ½ cup onion, diced
  • 2 garlic clove, minced
  • 1 tsp dried parsley
  • 1 tsp Italian seasoning
  • ½ tsp black pepper
  • ½ tsp fennel seeds, crushed
  • ¼ tsp paprika
  • ½ tsp red pepper flakes
  • ¾ tsp salt
  • 2 Roma tomatoes, diced
  • ½ tsp maple syrup
  • 1 block tofu, crumbled
Steps
  1. Heat oil in a pan over medium heat. Add onion and garlic and cook for 3 minutes. Make sure to stir well to coat the onion.
  2. After the 3 minutes are up, add the spices on the list up until the tomatoes. Stir to mix well and continue cooking for 2 minutes.
  3. Add the tomatoes and the maple syrup, stir frequently for 2 minutes.
  4. Add the tofu and stir all the ingredients to mix well. Drizzle the second teaspoon over the mixture and stir.
  5. Cook for 7 to 10 minutes, or until browned.
Notes
  • Bowl has sauteed spinach and a little whole wheat pasta.
