  • 1 lemon, halved
  • 2 tablespoons olive oil
  • 2 tablespoons drained capers
  • ¼ cup dry white wine, such as pinot grigio (or vermouth)
  • ½ cup vegetable or chicken broth (see Substitutions)
  • 1 ½ tablespoons unsalted butter (regular or vegan), quartered
