  • 3 ½ cups cooked, shredded chicken (about 2 lbs. boneless skinless chicken breasts)
  • 1 ½ cups diced celery
  • ⅔ cup chopped pecans
  • ⅔ cup dried cranberries
  • ¼ cup minced onion (optional)
  • 3 tablespoons finely grated Parmesan cheese
  • ⅔ cup mayonnaise
  • ¼ cup apple juice
  • 3 tablespoons honey
  • 2 teaspoons apple cider vinegar
  • 1 tablespoon poppy seeds
  • ½ teaspoon onion powder
  • Salt and black pepper to taste
