  • 2 lbs. ground lamb
  • 3 cloves garlic, minced
  • ¼ tsp. dried oregano
  • 1 heaping tbsp. finely chopped mint
  • 1 heaping tbsp. finely chopped parsley
  • ¼ tsp. red pepper flakes
  • kosher salt, to taste
  • black pepper, to taste
  • ½ zest of a lemon
  • 2 tbsp. olive oil
