Penne with salmon and veggies
Ingredients
  • 2 smoked salmon filets
  • 1 box penne
  • 1 yellow squash, cubed
  • 1 zuchinni , cubed
  • 1 small red onion, cubed
  • 1 lb asparagus, cut into 1 inch pieces
  • Olive or basting oil
  • 1 t Oregano
  • 1 T Basil
  • 1 T garlic powder
  • ½ stick Butter (optional)
  • Salt
  • Pepper
  • Fresh grated parm cheese
  • 1 lemon, cue into wedges
Steps
  1. 1. Heat water for pasta
  2. 2. Heat oven on 375
  3. 3.  While waiting for water t boil, cut veggies cover with oil salt and pepper
  4. 4. Spread on parchment lined paper, place in oven for 10 to 15 min
  5. 5. Add pasta to boiling water, cook as directed then drain
  6. 6.  Add spices and butter to pasta
  7. 7. Crumble smoked salmon, add to pasta, mix
  8. 8. Add veggies and mix.
  9. 9. Adjust seasoning if needed
  10. 10. Girlish with cheese and fresh squeezed lemon juice if desired
