French Onion Farro Bake
Ingredients
  • 1 ½ cups uncooked pearled or semi-pearled farro
  • 3 ½ cups low-sodium beef or mushroom broth, plus more as needed
  • 1 bay leaf
  • 2 tablespoons olive oil, plus more for brushing the pan
  • 2 large onions, thinly sliced into half-moons (1 ½ pounds total)
  • ¼ teaspoon fine salt
  • 2 cloves garlic, thinly sliced
  • 2 teaspoons chopped fresh thyme leaves
  • ¼ teaspoon freshly ground black pepper
  • 1 tablespoon sherry vinegar
  • 1 ¼ cups (4 ounces) grated Gruyère cheese
  • 3 tablespoons chopped fresh parsley, for garnish
