Egg-free Banana Bread
A banana bread that is egg-free and uses coconut oil for healthier alternatives.

Ingredients
  • 3 C all-purpose flour
  • 2 tsp baking soda
  • 2 tsp salt
  • 3 C sugar
  • 6 large ripe bananas
  • ½ C coconut oil
  • ½ tsp vanilla extract
  • 1 C cinnamon applesauce
Steps
  1. Preheat oven to 350 degrees.
  2. Mix the first 4 dry ingredients in a large mixing bowl.
  3. Mash bananas.
  4. Melt coconut oil.
  5. Stir together the mashed banana, coconut oil, vanilla extract, and applesauce.
  6. Slowly add the wet ingredients to the dry ingredients and mix thoroughly.
  7. Pour batter into two greased loaf pans and bake for 45 minutes or until the bread is a deep, golden brown and an inserted knife comes out clean.
