Japanese Pumpkin Croquettes (Kabocha Korokke) 南瓜コロッケ
Ingredients
  • ½ kabocha squash/pumpkin (½ = 1.5 lb with seeds)
  • 3 slices bacon
  • ½ onion
  • ½ Tbsp unsalted butter
  • kosher salt
  • freshly ground black pepper
  • ¼ cup all-purpose flour
  • 1 large egg
  • ½ cup panko (Japanese breadcrumbs)
  • 3 cups neutral flavor oil (vegetable, canola, etc)
