Low Carb Lemon Poppyseed Muffins
Ingredients

  • ⅓ cup coconut flour
  • 3 tbsp poppyseeds
  • 1 tbsp baking powder
  • ½ cup butter, melted
  • 3 large eggs, room temperature
  • ½ cup unsweetened almond milk
  • ¼ cup fresh lemon juice
  • 1 tbsp lemon zest
  • ½ tsp lemon extract (can also use vanilla)
  • subheading: Optional Glaze:
  • Powdered sweetener equivalent to ¼ cup powdered sugar
  • 1 tbsp lemon juice
  • Additional water to adjust consistency
