Crispy Quinoa with Kale and Grated Cheese
Ingredients
  • 1 bunch of kale (thick bottom part of the stem removed)
  • 1 cup quinoa (uncooked)
  • 2 teaspoons cumin
  • 1 teaspoon cinnamon
  • 2 cloves of garlic (finely chopped)
  • 2 eggs (whisked)
  • 9 tablespoons of olive oil
  • ½ to 1 cup of grated cheese
