Oat breakfast sausage
Ingredients
  • I found my recipe!  Steel Cut Oat Sausages: in instant pot add: 4 c veggie broth, 2 c steel cut oats, 4 T ground flax, 3 T Italian Seasonings, 2 T rubbed sage, 1 T red pepper flakes, 1 T liquid smoke, 1 T soy sauce, 2 t fennel (I grind it with mortar and pestle before adding), 1 t garlic powder, 1 t onion powder.  Cook for 5 minutes in instant pot.  Allow to cool for easier handling, stirring before letting it sit.  Form into sausage size patties.  I find wetting my hands with water helps keep them from sticking.  I keep a small bowl of water by me while forming the patties.  This makes 2 cookie sheets full of them, which I bake at the same time.  Bake at 400 for 20 minutes, flip.  Bake for 20 minutes more.  I generally don't spray pan, but cook on silicone mats.  I have also cooked these successfully on the grill.  After we eat our fill, I put a cookie sheet of them in the freezer and freeze individually on the cookie sheet then transfer to a freezer bag for "already made" sausages any time we want.  We love them with tofu scramble and toast, as breakfast sandwiches, with potatoes, with biscuits and pepper gravy.  Boy I panicked when I couldn't find this recipe today.  This is one of our favorites, hope some of you can enjoy too.  My husband formed the patties today so today's batch is not picturesque, but they will still be tasty.  Thank you everyone, I love this group.
