Baked Chimichangas
Optional serve with enchilada sauce and avocado

Ingredients
  • 2 cups black beans drained and rinsed
  • 2 cups frozen corn
  • 1 cup diced tomatoes
  • ½ cup finely diced red onion
  • ¼ cup minced cilantro
  • 3 TBSP lime juice
  • ½ tsp salt
  • ½ tsp garlic powder
  • ½ tsp cumin powder
  • ½ tsp chili powder
  • ¼ tsp black pepper
Steps
  1. Mix all filling ingredients together
  2. preheat oven to 425
  3. Pop tortilla into oven for 1 minute just long enough to soften, pliable but not crispy
  4. Spread cashew (Sunny) Cheese down center of 100% whole wheat sprouted tortilla add
  5. Add filling with slotted spoon leave at least 2” clear on all sides of tortilla.  Do not overstuff
  6. Roll up tortilla, burrito style tucking in the ends. And place on baking sheet rseam side down
  7. [place in oven and bake for 10 to 15 minutes until they are golden brown and crispy outside
  8. Freeze well
