Sub Dressing for 4 1/2 Tbsp…
Ingredients
  • 1 ¼ cups French or green lentils
  • Salt to taste
  • Dash of paprika (optional)
  • Dash of garlic powder (optional)
  • ¼ cup plus 2 tsp extra-virgin olive oil, plus more for drizzling
  • 1 cup dry farro (or 4 cups cooked quinoa)
  • ¼ cup lemon juice (about 2 small lemons)
  • 1 tablespoon plus 1 teaspoon lemon zest (about 1 lemon)
  • 2 minced large garlic cloves
  • 1 Tbsp maple syrup
  • 1 Tbsp Dijon mustard
  • Freshly ground black pepper to taste
  • 3 cups diced English cucumber (about one 12-ounce cucumber)
  • 2 ¼ cups chopped red bell pepper (about 2 medium)
  • 1 ½ cups diced red onion (about 1 medium)
  • 1 cup diced celery (about 4 ribs)
  • 1 cup roasted peanuts, roughly chopped
  • 1 cup chopped fresh parsley
