Simple Butter Chicken Recipe and Homemade Garam Masala
Ingredients

  • ¼ cup ghee or coconut oil
  • 1 large red onion, coarsely chopped
  • 3 cloves garlic, minced
  • 2 Tbsp fresh ginger, grated
  • 2 Tbsp curry powder
  • 1 Tbsp chili powder
  • 1 Tbsp garam masala
  • 2 tsp paprika
  • 2 tsp sea salt
  • 4 chicken breasts, cut into 1 ½ inch cubes
  • ½ cup water
  • ¼ cup + 2 Tbsp tomato paste
  • 2 cups full fat organic coconut milk
  • 1 large sweet potato, cut into ½ inch cubes (about 2 ½ cups worth)
  • 1 cup green peas (fresh or frozen)
  • 2 cups coarsely chopped cauliflower
  • 1 bunch cilantro or sprouts (for garnish)
  • Lime wedges for serving
