Ingredients
  • 2 Beyond sausage
  • 1 bell peppers chopped (1 ½ to 2-inch)
  • ½ large yellow onion, sliced into strips
  • 1 cup potatoes, cubed (½-inch)
  • 0.5 pint cherry tomatoes
  •  
  • 2 tablespoons extra virgin olive oil - divided
  • 2 tablespoons balsamic vinegar
  • ½ tablespoon lemon juice
  • 1 tsp dried oregano
  • 1 tsp dried parsley
  • 1 tsp dried basil
  • 1 tsp garlic powder
  • ½ tsp paprika
  • ½ tsp onion powder
  • ¼ tsp pepper
  • ½ tsp salt
  • ¼ teaspoon red pepper flakes

Steps
  1. Preheat the oven to 400 degrees F. Line a large15x21 rimmed baking sheet with foil.
  2. Add the sausage, bell peppers, onions, and potatoes to the pan (NOT tomatoes). Drizzle with the olive oil, red wine vinegar and lemon juice then sprinkle with all of the seasonings. Toss until evenly coated then spread the vegetables and sausage into a single layer.
  3. Bake for 15 minutes at 400 degrees F then remove from the oven. Add tomatoes and toss everything together, then spread back into a single layer. Return to oven and bake an additional 10 to 15 minutes or until potatoes are tender.
  4. Serve over rice.
