Caramelized onion bacon tomato balsamic jam

Ingredients

  • 1 lb bacon, cut into small pieces
  • 2 yellow onions, sliced
  • 2 to 3 lb cherry tomatoes, halved- you can use larger tomatoes and just cut them down into quarters or large dice. You can also peel the larger tomatoes if you're feeling motivated.
  • ¼ c. Balsamic vinegar
  • ¼ c. Brown sugar
  • 1 tsp salt
Steps
  1. Over medium high heat, render and drain the bacon. Reserve 2 Tbsp. Bacon fat. Add the onion. And cook over low heat until caramelized (this will take 45 minutes to an hour. Stir occasionally). Raise the heat and add the tomatoes, balsamic vinegar, brown sugar, and salt. Stir to combine. Cook over medium heat until reduced to a jam like consistency (about 20 to 30 minutes). Add the bacon back in. Stir to combine. Allow to cool to room temperature before storing in an airtight container. This can also be canned and kept for 1 year.
