Pork Souvlaki with Pasta and Vegetables
Ingredients
  • 2 pork Souvlaki skewers (Greek)
  • 1 large carrot, chopped
  • 2 stalks celery, chopped
  • 1 bunch broccoli, cut into bite sized pieces
  • 2 mini bell peppers, sliced
  • 1 medium onion, halved and sliced
  • 1 tbsp. Vegetable oil
  • 1 tsp. minced garlic
  • 2 cups water
  • 1 cup low-sodium tomato juice
  • 2 ¼ cups uncooked rotini (I use Catelli Healthy Harvest)
  • ¼ tsp. cayenne pepper
  • 3 tsp. black pepper
  • 2 tsp. Italian seasoning (McCormick)
  • 1 tsp. Accent food enhancer (MSG; optional)
  • 1 tsp. chili powder
  • 1 tsp. cornstarch
  • ½ cup water
