  • 1 teaspoon olive oil
  • ½ yellow onion , chopped
  • 5 to 6 cloves fresh minced garlic
  • ½ bell pepper, chopped and seeds removed
  • ½ c fresh cilantro
  • 1 tbsp Flavor Gods Everything Seasoning
  • ½ tsp Everything Seasoning Trader Joe’s
  • Pink salt and pepper to taste
  • 1 cup lentils rinsed and drained in mesh strainer (I used green in this recipe)
  • 2 ½ cups low sodium chicken broth

  • Instructions
  • Set the Instant Pot to the "saute" setting, and add olive oil. When IP says Hot, Toss in onion, garlic, and bell pepper. Cook until the vegetables start to caramelize, about 5 to 6 minutes. (Add a splash of water as needed to help prevent sticking.)
  • To the cooked vegetables, add in the spices, salt, pepper and lentils and stir until fragrant, about 1 minute. Press the "off" button to stop the sautéing function. Add in the broth and cilantro and mix well. Cover securely with the lid, turning the knob at the top to the "sealing" position. Press the "manual" button, then adjust the time to cook at high pressure for 20 minutes. Once the cooking is done, allow the pressure to release naturally (important step) for at least 10 to 15 more minutes then turn nozzle to quick release the rest of steam before removing the lid. Be sure to turn the knob at the top to "venting" to allow any extra steam to release before carefully removing the lid.

  • note: **If you don’t have the Flavor God Everything Seasoning you can create your own mixture using equal parts of Cumin, garlic powder, onion powder, chili powder, dried basil, dried parsley, paprika, salt, pepper and coriander.
