Berries and Cream Vanilla Cake
Ingredients
  • subheading: For the Cake:
  • 1 cup (160g) all purpose gluten free flour (I use “ Better Batter ”)*
  • 1 cup (110g) gluten free oat flour (or sorghum flour)*
  • 2 tsp  baking powder
  • 1 tsp  baking soda
  • 1 tsp  xanthan gum (omit if your glu ten  free flour already contains xanthan gum)
  • 1 tsp  salt
  • 1 cup dairy free milk of choice (I use “So Delicious Unsweetened Coconut Milk”)
  • ¾ cup  maple syrup
  • ¼ cup avocado oil (coconut oil works as well)
  • 1 tsp  vanilla
  • subheading: For the Coconut Whipped Cream:
  • 1  can full fat coconut milk (refrigerated overnight)
  • 3 tbsp  maple syrup
  • 1 tsp  vanilla extract
  • subheading: Other Ingredients:
  • 1 cup strawberries
  • ½ cup blueberries
  • ½ cup raspberries (black or red work great)
