Ingredients
- 1 Tablespoon coconut or olive oil
- 1 small yellow onion, diced
- 1 Tablespoon minced ginger
- 2 cloves garlic, minced
- 1 can, 14 oz coconut milk
- 2 cans, 15.5 oz each chickpeas, rinsed and drained
- 2 cups of baby spinach
- 1 can crushed tomatoes, I prefer Muir Glen Organic Fire Roasted or use 3 medium red tomatoes chopped
- ½ cup water - add more if needed
- 1 teaspoon Cumin Seeds
- 1 teaspoon Garam Masala Powder
- ½ teaspoon red pepper powder, adjust per spice tolerance
- ½ teaspoon Turmeric Powder
- 1 Tablespoon fresh lime or lemon juice
- ½ teaspoon salt - adjust per taste
