Instant Pot Chickpea Coconut Curry
Ingredients
  • 1 Tablespoon coconut or olive oil
  • 1 small yellow onion, diced
  • 1 Tablespoon minced ginger
  • 2 cloves garlic, minced
  • 1 can, 14 oz coconut milk
  • 2 cans, 15.5 oz each chickpeas, rinsed and drained
  • 2 cups of baby spinach
  • 1 can crushed tomatoes, I prefer Muir Glen Organic Fire Roasted or use 3 medium red tomatoes chopped
  • ½ cup water - add more if needed
  • 1 teaspoon Cumin Seeds
  • 1 teaspoon Garam Masala Powder
  • ½ teaspoon red pepper powder, adjust per spice tolerance
  • ½ teaspoon Turmeric Powder
  • 1 Tablespoon fresh lime or lemon juice
  • ½ teaspoon salt - adjust per taste
