This Thai Curry Recipe is ready in under 30 minutes! With only 5 simple ingredients and tons of flavor, you will love having this on your weekly rotation! Serve over rice or noodles!

  • 5 boneless skinless chicken thighs
  • 2 red bell peppers
  • 4 oz. red curry paste (I use THIS whole jar)
  • 13.5 fluid oz. can unsweetened full fat coconut milk (I use THIS)

  • Cilantro
  • Chopped Peanuts
  • Green onions
  • Squeeze of lime
  • Sriracha
  • Jasmine rice or Thai noodles for serving (I used these bean threads this time)
