Ingredients
  • 1 tablespoons  extra virgin olive oil (Use Kasandrinos *FREE Bottle**)
  • 1 small yellow onion, diced
  • 2 to 3 large carrots, peeled and chopped
  • 2 large celery ribs, chopped
  • 1 medium zucchini, cut into half-moons
  • 3 cloves garlic, minced
  • 1 tsp dried thyme
  • ¾ tsp dried oregano
  • ½ tsp crushed red pepper, optional for spice
  • 1 tsp salt, more to taste
  • ½ tsp black pepper
  • 2 cans (15-ounces) of chickpeas, drained and rinsed
  • 6 cups low-sodium vegetable broth, or chicken broth
  • 3 to 4 cups baby spinach
  • ¼ cups fresh parsley, chopped
  • 1 large lemon, juiced
  • Optional garnishes: fresh parsley, feta cheese, or parmesan cheese
