Peanut butter noodles with Thai beans
Ingredients
  • 250 g noodles
  • 4 tbsp peanut butter
  • 2 tbsp soy sauce
  • Pinch chilli flakes
  • 1 tbsp sweet chilli
  • ½ tbsp white wine vinegar
  • 4 tbsp Thai green curry paste
  • 50 ml water
  • 2 tins mixed beans
  • Coriander
Steps
  1. Cook noodles
  2. Whisk PB, soy, chilli, sweet chilli, white wine - it will be thick
  3. Heat 1tbsp oil, curry paste and water for 1min
  4. Stir in beans and heat
  5. Drain noodles, keep cup of water
  6. Add sauce to noodles, with enough water to make right consistency
  7. Mix in beans
  8. Serve with coriander
