Ingredients
  • 1 TBS Olive oil
  • 2 Cloves of garlic, minced
  • 1 brown Onion, diced
  • 2 large Carrots, thinly sliced
  • 2 Celery stalks, roughly chopped
  • 1½ tsp minced Ginger (I used jar)
  • 1 tsp ground Turmeric
  • 6 cups Chicken stock (may wish to add another 2 cups at the end)
  • 500g Chicken breast
  • 1 tsp Fresh Rosemary, finely chopped
  • 1 tsp fresh Thyme, stems removed & finely chopped
  • ½ teaspoon salt
  • Freshly ground Black pepper
  • 1 cup Pearl Couscous
  • ⅔ cup frozen Peas (optional, but recommended)
