Ingredients
  • 1 cup VKF almond or VKF einkorn
  • ½ cup zero carb granulated sugar
  • ¼ cup packed brown sugar (swerve)  or optional method explained below.
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • 1 Tbls. Cinnamon ( more or less to taste)
  • ¼ tsp ground ginger ( more or less to taste)
  • ¼ tsp ground cloves ( more or less to taste
  • ¼ tsp ground nutmeg  ( more or less to taste)
  • 2 large eggs room temp
  • ½ cup oil such as canola oil or another neutral flavored oil or melted butter
  • 1 tsp vanilla extract ( more or less to taste)
  • ¼ cup sugar free apple sauce
  • (OPTIONAL...¾ tsp molasses, read notes below before adding this)
  • 1 ½ cup grated /shredded carrots
  • Cream cheese frosting
  • 4 oz. Cream cheese softened/ room temp
  • ¼ cup butter softened/ room temp
  • ¼ cup plus 2 Tbsp zero carb powdered sugar
  • ½ tsp vanilla   extract
  • ¼ cup HWC
