  • 1 cup raw cashews, soaked in water 4 to 8 hours and drained
  • ¾ cup unflavored soy or almond milk
  • 3 tbsp. red wine vinegar
  • 1 ½ tsp. Dijon mustard
  • 1 garlic clove
  • ½ cup finely chopped red onion, about ¼ of a medium onion
  • ½ cup chopped scallions (about 2)
  • 2 tbsp. finely chopped fresh dill
  • salt and pepper to taste
