Mexican Soup with Corn Dumplings from Veracruz

  • 1 ½ cup green beans (cut into small pieces)
  • 2 bay leaves
  • salt (to taste)

  • 2 medium tomatoes
  • 2 guajillo peppers (stem and seeds removed)
  • 1 small onion (cut in half)
  • 2 garlic cloves (peeled)
  • subheading: for the corn dumplings:
  • 1 cup masa harina (read notes)
  • 1 Tbsp lard (or olive oil)
  • 1 Tbsp fresh epazote or cilantro (chopped)
  • ½ cup lukewarm water
  • ½ tsp salt
