Brazilian Fish Stew
Ingredients
  • 1 kg snapper fillets (or other white-fleshed fish), skinned and cut into 5 cm pieces
  • 3 tablespoons lime juice sea salt and freshly ground black pepper
  • 3 tablespoons coconut oil
  • 1 brown onion, diced
  • 8 garlic cloves, finely chopped
  • 1 Roma tomato, chopped
  • 250 ml (1 cup) fish stock or water
  • 250 ml (1 cup) coconut cream
  • 1 long red chilli, deseeded and finely chopped
  • 1 tablespoon chopped coriander leaves, plus extra leaves to garnish
  • 1 Roma tomato, finely sliced
  • ½ onion, thinly sliced
  • 2 limes, cut in half
  • Cauliflower rice to serve
