Ingredients
  • 4 cups (350 grams) old-fashioned oats
  • 1 cup (125 grams) raw, unsalted sunflower seeds
  • ½ cup (70 grams) raw, unsalted pumpkin seeds
  • 1 cup (about 120 grams) nuts, such as almonds (slivered, sliced or even whole), pecans, walnuts, cashews, skinned hazelnuts, skinned pistachios or a combination (see above)
  • 1 ½ teaspoons ground ginger (see above)
  • 1 teaspoon ground cardamom (see above)
  • ⅔ cup (160 ml) maple syrup or honey
  • ¾ cup (150 grams) brown sugar, light or dark
  • 1 to 1 ¼ teaspoons fine sea salt (to taste)
  • 6 tablespoons olive (or other) oil (see above)
  • 2 teaspoons pure vanilla extract
  • 1 cup (60 grams) flake or shredded coconut, preferably unsweetened (see above)
  • 1 cup (about 150 grams) plump dried fruit, snipped to size if necessary (see above)
