Italian Roasted Cauliflower - FP Friendly

Ingredients
  • 1 head fresh cauliflower cut into florets
  • 1 red bell pepper(s) cut into 1 inch strips
  • 1 onion(s) sliced
  • 3 Tbsp dried dill dried
  • 3 Tbsp balsamic vinegar
  • 2 Tbsp white wine vinegar
  • 2 tsp coconut oil
  • to taste salt and pepper
Steps
  1. Combine the cauliflower, bell pepper, onion, dill, balsamic vinegar, white wine vinegar, and coconut oil in a large resealable bag; shake bag to evenly coat.
  2. Allow to marinate in refrigerator 1 to 2 hours, turning bag occasionally.
  3. Preheat oven to 450.
  4. Open the bag and season with salt and pepper; reseal the bag and shake again to coat.
  5. Pour into a 9x13 glass baking dish.
  6. Bake in the preheated oven until tender, about 30 minutes, stirring occasionally.
