Farro and Kale Salad

Ingredients

  • 4 cups chopped kale
  • ¾ cup farro, uncooked
  • ½ red onion, small dice
  • ½ can chickpeas (or as much as you'd like)
  • ¼ cup sliced almonds, toasted
  • Crumbled feta, as much as you'd like
  • Salt and Pepper to taste
  • Lemon Dressing (recipe below)
  • subheading: Lemon Dressing:
  • 1 lemon, juiced
  • 1.5 tsp mustard (use 2 to 3 tsp if you want it creamier)
  • 2 tsp honey
  • Pinch of salt
  • ¼ cup olive oil
