Quick-Baked Vegetarian Spinach Lasagna
Ingredients
  • 16 ounces frozen chopped spinach, defrosted and squeezed dry*, see below for how to best do this
  • 16 ounces ricotta cheese, low fat or whole milk, about 2 cups
  • 2½ cups shredded low-moisture mozzarella cheese, divided
  • ¼ cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • 1 large egg, lightly beaten
  • 3 cups pasta sauce
  • ¾ pound no-boil lasagna noodles, sometimes called "oven ready noodles"
