Vegan Stuffed Pepper Soup
Ingredients

  • 1 red bell pepper, finely chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 2 cups low-sodium vegetable broth (or more, as needed)
  • 1 can (14.5 oz) tomato sauce
  • ¾ cup raw rice (jasmine or any preferred rice variety)
  • Kosher salt and black pepper to taste
