Puerto Rican patties and dip
Ingredients
  • I peel about 7 large potatoes boil them and season the water with 3 packets of sazón and adobo to taste because I’m too Hispanic to just use salt and pepper lol. I’ll peel and add about 3 carrots. Once the potatoes are almost cooked I’ll add 3 cans of black beans 3 cans of of garbanzo beans and 3 cans of red kidney beans. Strain out the food but leave about a cup of potatoes and beans in the water. I put the food in the processor and once done I’ll add corn so the corn doesn’t get destroyed and you have enough for about 4 to 7 days. The potatoes and beans left boiling. Smash them down and once most of the water has boiled out you’ll have amazing bean dip   I like to bake homemade fries and dip them in the beans. Also the patties go well with mashed potatoes, brown rice, I’ll make salads and use hummus as a dressing and I’ll have a patty on the side.
  • For the tomatillo jalapeño sauce I’ll put 5 tomatillos 3 garlic cloves and 1 jalapeño in a sauce pan with salt and a little bit of water until soft and I’ll blend. Let cool and drizzle on salads or tacos or even bean/potato patties. lol sorry.   • I’m not Mexican just Puerto Rican but I love ALL Hispanic food lol but you can add cilantro and onions to the taco I’m sure it’ll taste good too. I’m just not a fan of raw onion.
