Monell's Corn Pudding

Ingredients
  • 9 eggs slightly beaten
  • ¼ cup milk
  • 6 Tsp butter - 4 melted, 2 for pan
  • ¾ cup sugar
  • ⅓ cup flour
  • 4 cups creamed corn
Steps
  1. Preheat oven to 350 degrees.
  2. Place 2 T butter in a 9x13 casserole dish and melt in oven.
  3. In a large bowl combine the eggs, milk, butter and sugar.
  4. Whisk in flour until smooth, then stir in corn, only until just combined. Do not over stir the corn mixture.
  5. Pour mixture into the hot casserole dish.
  6. This will begin the "souffle" of this dish and will help create the custard.
  7. Bake for 45 minutes to 1 hour.
