Ingredients
  • Olive oil
  • 1½ cups cherry tomatoes (about 8 oz.), halved
  • Salt and black pepper
  • 1 lb new potatoes, skins on
  • 1 large yellow onion, thinly sliced
  • 3 tablespoons sugar
  • 2 teaspoons butter
  • 3 oregano sprigs
  • 5 oz aged goat cheese, thinly sliced
  • 1 puff pastry sheet, thawed, rolled thin (keep chilled)
