Pressure-Cooker Christmas Chicken Recipe with Xmas Stuffing
Ingredients
  • 1 free-range chicken or guinea fowl, around 1.5kg, any giblets removed
  • 2 tbsp olive oil
  • Large knob of butter
  • 200ml chicken stock or water
  • 1 head of garlic
  • 50ml single cream (optional)
  • Salt and freshly ground pepper
  • subheading: For the stuffing:
  • 25g butter
  • 1 onion, finely chopped
  • 3 garlic cloves, finely chopped
  • 100g breadcrumbs
  • 1 egg
  • Grated zest and juice of 1 lime
  • A handful of fresh coriander, finely chopped
  • A handful of curly parsley, finely chopped
