Carrot Cake with Cream Cheese Icing (Thermomix Method Included) « Mother Hubbard's Cupboard
Ingredients

  • This is a large cake and cuts into 35 pieces.
  • 300g Carrot
  • 2 Cups Raw sugar (380g)
  • 1 ½ Cups of Oil ( 375g) I used Grapeseed, but it is your choice.
  • 4 Eggs
  • 2 ½ Cups of Plain Flour (400g)
  • 1 Teaspoon Baking powder (10g)
  • 2 Teaspoons Cinnamon (10g)
  • 1 Teaspoon of Bicarbonate of Soda dissolved into 1 Tablespoon of water
  • 100g Sultanas/Raisin/Dried Fruit

  • 1 x 250g Block of Philadelphia Cream Cheese (full Cream)
  • 2 Cups of Pure Icing Sugar (360g)
  • 2 Teaspoons (10g) Lemon Juice
