Ingredients
  • subheading: Recipe for queso:
  • 2 cups raw unsalted cashews, soaked (I was lazy and didn't soak mine, you can also boil them for about 15 mins instead of soaking)
  • 2 cups water
  • 1 large red bell pepper
  • About 1 to 2 tsp onion powder, add more to taste
  • 1 to 2 tsp garlic powder, or more
  • At least 3 to 4 tbsp of nutritional yeast
  •  
  • I also like to add some smoked paprika, cayenne and red pepper flakes.

  • I put everything in the blender, first the cashews and some water, then after blending that I add in the red bell pepper, in slices and add water as needed, and then add in everything else and continue blending and tasting until it's where I want it to be. I like to warm it up on the stove before I eat it. :)

  • If you don't have probiotics, you can add some lemon juice, raw apple cider vinegar and a tiny bit of lime juice. Add very small amounts at a time, mix well and add more as needed.

  • The salsa is equal parts black beans, corn, diced tomatoes with chiles (in the tomato juice they come in), I add some chopped onion (red or white), garlic powder or minced garlic, dried cilantro, smoked paprika, cayenne, salt, pepper, red pepper flakes, a little bit of lime juice.
