Black Garlic Pappardelle Pasta
  • 1 pound dry Pappardelle pasta *
  • ¼ cup olive oil, for the pasta and the pan
  • ¾ cup black garlic cloves (about 3 heads)
  • 1 cup shallots, thinly sliced
  • 1 cup dry white wine
  • 5 tablespoons unsalted butter
  • Kosher salt and freshly ground black pepper to taste
  • 1 to 2 tablespoons finely chopped chives for garnish, washed, dried
